60g unsalted butter
25g flour
500g cottage cheese
2 eggs
20g sugar
1 teaspoon cinnamon


In a bowl, mix the cottage cheese, sugar and cinnamon together. Then, add the eggs one by one. Add the flour and a pinch of salt, then blend the whole in order to get a homogeneous mix. On a baking tray, spread the pastry on about 2 cm thick between two sheets of baking paper and place it in the fridge for 2 hours minimum (syrnikis can be kept several days like this, or frozen). Cut little circles into the pastry, flour them a little. In a frying pan, melt the butter and fry the syrnikis for 2 minutes on both sides. Sprinkle with powdered sugar and serve immediately, accompanied by a cup of tea.
